Richard Lynch Consulting are recruiting an Executive Head Chef for a prominent 5-star hotel in Northern Ireland. As Executive Head Chef, you are responsible for all aspects of managing the kitchen areas and personnel, ensuring the quality preparation of all menu items to the highest standards.

KEY RESPONSIBILITIES:

  • Manage all kitchen areas and personnel.

  • Ensure quality preparation of all menu items to the highest standards.

  • Efficient roster scheduling and managing labour costs.

  • Assist HR Manager with recruitment and oversee staff productivity and performance.

  • Work hands-on in a fast-paced environment, ensuring guest satisfaction even during peak periods.

  • Develop and implement new seasonal menu ideas using the best local produce for bars, restaurants, special events, and in-room dining.

  • Prioritise, organise, and delegate work assignments.

  • Oversee staff performance with prompt follow-up where required.

  • Implement and document HACCP efficiently, maintaining all health and safety standards.

  • Reduce food and energy wastage in the kitchens.

  • Develop team spirit amongst kitchen staff to maintain a cohesive team.

  • Oversee and direct training of new hires and maintain an ongoing training programme for existing staff.

CANDIDATE REQUIREMENTS:

  • 3+ years of 5-star hotel or resort experience in a similar Executive Head Chef role.

  • Ability to work hands-on in a fast-paced environment.

  • Passionate and creative with menu development.

  • Strong organisational and delegation skills.

  • Ability to ensure compliance with HACCP and health and safety standards.

  • Proven leadership and team-building skills.

  • Full legal status to live and work in Northern Ireland without restriction.
